Cajun Shrimp Stuffed Peppers

Cajun Shrimp Stuffed Peppers: (Serves 2)

  • 2 red peppers cut in half
  • 1 onion
  • 3 cloves garlic
  • half can chickpeas
  • 1 carrot
  • 1 zucchini
  • 1/2 cup each of brown rice and barley
  • 1/4 tsp. paprika
  • 1/2 tsp. cumin
  • 1 tsp. Mexican seasoning
  • 1/2 jar of tomato sauce

Cut and de-seed your red peppers and set aside.

Cook your barley and rice together in a pot with 2 cups of water.

In a pan, sautee your onion and garlic. When onions are soft toss in the other ingredients and let simmer for about 15 mins or until veggies are soft.

Grab your red peppers and layer the rice and veggie mixture inside.  Stuff in as much as you can and then sprinkle the top with a little bit of cheese.

Bake in the oven for 15-20 mins (this time can be reduced if you par-boil your peppers first).  You want the peppers to be soft and your cheese to be nice a bubbly.

Serve with a side salad and enjoy!
