Flour-less Oatmeal Cookie Pancakes

Flourless Oatmeal Cookie Pancakes:

This recipe is perfect for one  big serving. (Measurements are approximate )

  • 3/4 cup oatmeal (you can blend in a blender to make it more like a flour, or leave as is)
  • 1 Tbsp. ground flax seed
  • 1 tsp. cinnamon
  • 1/8 tsp. baking powder
  • pinch of salt

Mix dry ingredients together.

  • 2 egg whites beaten
  • 1/4 cup of the milk of your choice

Whip up your egg whites and then add the milk.  Stir in with the dry ingredients.  Let stand for about 10 mins to let the oatmeal soak up some of the milk. (You can do this step the night before if you are pressed for time in the morning)

Heat up your pan and drop in your batter. Feel free to add in any other additions at this point; I put some frozen blueberries on top…any other fruit like apples, dried crans or raisins would be great as well. This makes me about 3 good sized “cookies.”  Cook as you would a regular pancake.

Top with your favorite fruit, nuts, jams etc. and get ready to be amazed.
