Tomato Poached Eggs over Barley
Tomato Poached Eggs over Barley:
- 1 jar tomato sauce
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 small red and green pepper
- 1 tsp. Italian seasoning
- eggs
- 1 cup barley
- 2 cups water
Cook barley in a pot for about 15-20 mins; until it’s fluffy and tender.
Sautee onions and garlic in a pan. When soft add in your other veggies and tomato sauce. Cook until the veggies are soft. Gently drop your eggs into the sauce and cover with a lid. Let cook until eggs are ready.
Serve on top of barley.
